Creamy Potatoes Can Be Made the Night Before
Creamy Potatoes get their flavor from the delicious mixture of cheese, sour cream and green onions – which add a festive touch. They are not too far a stretch from regular mashed potatoes for holiday guests who like tradition.
Ingredients:
- 6 large potatoes
- 3 tablespoons milk
- 2 cups sour cream
- 1 bunch green onions, chopped
- 1 ¾ cups cheddar, grated
- 2 teaspoons salt
- ¼ teaspoon pepper
- 2 teaspoons paprika
Cooking Instructions:
- Cook potatoes. Mash with milk.
- Stir in sour cream, green onions, 1 ¼ cups of the cheese, salt and pepper.
- Transfer to greased 9x13” pan.
- Top with remaining ½ cup of cheese and sprinkle with paprika.
- Cover and refrigerate for a minimum of three hours. Bake uncovered at 350F for 35 minutes.
For a lighter recipe, low-fat sour cream and cheese can be used.

Ingredients:
- 8 cups frozen hashbrowns (2 kilograms)
- ¾ cup chopped onion
- 2 cups grated cheddar
- ½ cup melted butter or margarine
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 can condensed cream of mushroom soup
- 2 cups sour cream
Topping:
- ¼ cup melted butter or margarine
- 2 cups crushed cornflakes (crush in blender)
Cooking Instructions:
- Thaw potatoes in a large bowl for one hour on the counter.
- Stir in onion and cheese.
- In a medium bowl, combine melted butter or margarine, salt, pepper, condensed soup and sour cream. Add to potato mixture and stir well.
- Spoon mixture into a greased 9x13” baking dish.
- Flatten with spatula, then sprinkle with crushed cornflakes.
- Drizzle with melted butter or margarine.
- Cover with foil and bake at 350F for 90 minutes.
For a lighter recipe, low-fat sour cream and cheese can be used. If a guest has an allergy to MSG (monosodium glutamate), the label on the condensed cream of mushroom soup should be read carefully, as certain brands such as Campbell's contain this food additive.
